Whole Wheat Pasta with Avocado Pesto

Ingredients:  (2 servings)

  • - 250 g whole wheat spaghetti
  • - 2 ripe avocados
  • - 50 g olive oil
  • - Juice of 2 limes
  • - Zest of 2 limes
  • - 1/2 bunch cilantro
  • - 2 tsp Pasta ArgoHerbs Mix

for the serving:

- 100 g cashews
- Fresh basil
- 1 tbsp olive oil

Instructions:

1. In a pot of boiling water, add salt and the whole wheat spaghetti, and cook for 9 minutes. Once cooked, drain the spaghetti.

2. In a bowl, combine olive oil, lime zest, lime juice, fresh cilantro, and 2 tsp Pasta ArgoHerbs Mix to homogenize the ingredients.

3. Transfer the avocado pesto to a bowl.

4. Heat a pan and add cashews, sauté until golden.

5. Pour the hot cooked pasta into the bowl with pesto and mix.

6. Add the sautéed cashews, fresh basil, and a tablespoon of olive oil.

Feel free to adjust quantities and seasonings according to your taste preferences.
